Stoof de appel drie\u00a0minuten in een pan zonder vetstof.\u00a0<\/li><li class=\"direction-step\">Voeg de rozijnen, suiker, rum, kaneel toe. Stoof nog drie\u00a0a vijf\u00a0minuten tot de appel zacht wordt.\u00a0<\/li><li class=\"direction-step\">Haal de vulling uit de pan en voeg de broodkruim, custardpoeder en abrikozenjam toe en laat de vulling afkoelen.<\/li><li class=\"direction-step\">Voor de vanillesaus breng je tweederde\u00a0van de room aan de kook. Haal het merg uit het vanillestokje en voeg dit met het suiker aan de room toe.\u00a0<\/li><li class=\"direction-step\">Roer de eidooiers met eenderde\u00a0van de room door elkaar heen. Als de room in het pannetje kookt voeg je deze al roerend bij de eidooier. Dan gaat alles terug het pannetje in en verwarm je de saus tot 82 graden. Daarna gelijk van het vuur af en giet je de saus in een koude kom.<\/li><li class=\"direction-step\">Leg een plak filodeeg op een droge theedoek. Strijk deze in met het losgeklopte ei. Leg er nog een plak filodeeg op. Herhaal dit tot je vier lagen hebt.\u00a0<\/li><li class=\"direction-step\">Leg een baan van de appelvulling op het filodeeg. Bestrijk de rest van de plak in met ei. Rol nu het deeg op en leg op een bakplaat met bakpapier.
