Plaats een snijplank en een 2 literfles met water boven op de tofu om het vocht eruit te persen. Laat de tofu zo 2 uur van tevoren in de koelkast staan.<\/li><li class=\"direction-step\">Verhit de zonnebloemolie in een een koekenpan en bak de tofu al omscheppend in tot blokjes rondom licht gekleurd zijn. Voeg de sjalot, de knoflook en de gember toe en bak ca. 3 minuten verder. Voeg 2 el water, de sojasaus en de suiker toe en verhit kort verder tot de tofu bruin gekleurd is en geheel geruig is. Voeg het sesamzaad en de munt toe en haal de pan van de kookplaat. Houd apart. Kook ondertussen de 2 eieren hard.<\/li><li class=\"direction-step\">Kook de rijst intussen volgens de aanwijzing op de verpakking in water met een snufje zout. Laat de rijst iets afkoelen.<\/li><li class=\"direction-step\">Snij de peper, radijs, komkommer in dunne plakjes. De avocado in blokjes en rasp de rode kool in de keukenmachine. Snij ook wat reepjes gerookte zalm.<\/li><li class=\"direction-step\">Snij de wortel in dunne plakken en blancheer ca. 5 minuten in een pan met kokend water. Giet af met koud water en laat uitlekken.<\/li><li class=\"direction-step\">Verdeel de rijst over 2 diepe kommen, Schep de tofu op en rangschik de toppings er mooi omheen. Pers er citroensap overheen en bestrooi met zout en peper naar smaak.<\/li><li class=\"direction-step\">3 delen sojasaus, rijstazijn 2 delen, 1 deel balsamico.
