Breek 100 g chocolade in stukjes smelt deze langzaam. Laat de chocolade iets afkoelen. Verwarm ondertussen de oven voor op 175 \u00b0C (3D &#8211; hete lucht) Bekleed de bodem van de springvorm met bakpapier en vet de wanden in met boter.<br \/><\/li><li class=\"direction-step\">Splits \u2154 van de eieren. Klop met een mixer de eidooiers, 50 g suiker en de kastanjepuree tot licht en schuimig mengsel. <br \/><br \/>Klop de eiwitten stijf. Voeg 60 g suiker toe en klop nog ca. 1 minuut door. <br \/><br \/>Roer de gesmolten chocolade door het eierdooiermengsel. <br \/><br \/>Spatel het eiwitschuim in gedeelten erdoor en meng goed. <br \/><br \/>Schep het chocoladeschuim in de springvorm en bak de taart in 30 \u00e0 35 min. gaar. (Als metalen pen erin gestoken wordt, moet die er droog uitkomen.) Haal de taart uit de oven en laat op een rooster laten afkoelen.<br \/><\/li><li class=\"direction-step\">Smelt de rest van chocolade in de pan en roer glad. Neem de chocolade van het vuur. <br \/><br \/>Splits de rest van de eieren en roer alleen de eierdooiers er \u00e9\u00e9n voor \u00e9\u00e9n door. <br \/><br \/>Zet de kom terug op de pan en verwarm de chocoladesaus al kloppend tot saus dikker wordt. Laat de saus afkoelen. <br \/><br \/>Klop de slagroom met de rest van suiker stijf. Schep de slagroom en de cognac door de afgekoelde chocoladesaus.<\/li><li class=\"direction-step\">Neem de taart uit de vorm en leg op een schaal. <br \/><br \/>Bestrijk de boven- en de zijkanten dik met de helft van de chocoladeroom. <br \/><br \/>Zet de taart en de rest van de room ca. 5 min. in koelkast. <br \/><br \/>Bestrijk opnieuw met de chocoladeroom.
