Snijd de pancetta in kleine stukjes. Verhit de boter in een grote koekenpan en bak de pancetta 3 min. Snijd ondertussen de champignons in kwarten. Voeg de champignons toe aan het spek en bak 5 min. op hoog vuur.<br \/><\/li><li class=\"direction-step\">Doe ondertussen de bouillontabletten en gedroogde paddenstoelen met het kokende water in een kom en laat de bouillon oplossen. Voeg de risotto toe aan het spek en bak 3 min. op laag vuur mee tot de korrels glazig zijn.<br \/><\/li><li class=\"direction-step\">Verdeel het mengsel over de ovenschaal, schenk de bouillon erbij en roer door. Bak alles ca. 40 min. in het midden van de oven. Neem na 35 min. uit de oven en roer de cr\u00e8me fra\u00eeche erdoor. Zet nog ca. 5 min. terug in de oven.<br \/><\/li><li class=\"direction-step\">Snijd ondertussen de peterselie fijn.
