Snijd de pompoen met schil en al in kleine stukjes.\u00a0Breng aan de kook in een laagje gezouten water.\u00a0<\/li><li class=\"direction-step\">Kraak de walnoten, ontvel ze en hak ze fijn.\u00a0<br \/>Maak de prei, bladselderij en het pepertje schoon en snijd ze fijn.\u00a0<\/li><li class=\"direction-step\">Verhit een scheutje olijfolie in een ruime pan met dikke bodem en bak hierin de prei, bladselderij en peper een paar minuten aan.<br \/><\/li><li class=\"direction-step\">Voeg de risotto rijst toe en bak mee tot alle korreltjes glimmen en beginnen te springen in de pan. Voeg tussentijds steeds schepjes van de \u201cpompoensoep\u201d toe, totdat de soep op is en de rijst beetgaar en romig.\u00a0<br \/>Eventueel rest van de pompoen kapot koken er ook door heen doen.<\/li><li class=\"direction-step\">Voeg in de lege soeppan een scheutje olie toe en bak hierin de groene kruiden knapperig. Laat op keukenpapier uitlekken en bestrooi met wat zout.\u00a0<\/li><li class=\"direction-step\">Schep de jonge walnoot door de risotto en verdeel het over warme borden. Bestrooi het met de knapperige kruiden, eventueel met wat eetbare bloemen en druppel er royaal de vegan honing over.
